Step-by-Step Instructions
  1. Brown the beef in a large Dutch oven with oil, seasoning with salt and pepper, until browned on all sides (5-7 minutes).
  2. Remove beef and add mushrooms. Sauté until golden, then add onions, carrots, and celery, cooking until softened (5-6 minutes).
  3. Stir in spices, flour, and tomato paste. Cook for 2-3 minutes, then slowly add Guinness while deglazing the pot.
  4. Return beef to pot, add enough broth to cover, simmer gently for about 2 hours until tender.
  5. Preheat oven to 400°F (200°C). Spoon filling into pie plate, cover with pastry, cut slits in top, and brush with egg.
