- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil or non-stick spray.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent. Add minced garlic and cook for an additional 1 minute.
- Add 1 pound of lean ground beef to the skillet. Cook for about 6–8 minutes until browned, then drain excess fat. Season with paprika, oregano, salt, and black pepper.
- In a separate bowl, combine 1 cup of non-fat Greek yogurt, ½ cup of light sour cream, and 1 tablespoon of cornstarch. Whisk until smooth and creamy.
- In the greased baking dish, layer half of the thinly sliced potatoes, then half of the cooked beef mixture, half of the creamy yogurt mix, and half of the reduced-fat cheddar cheese. Repeat the layers.
- Pour 1 cup of low-sodium beef broth evenly around the edges of the casserole.
- Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15–20 minutes until the top is golden brown and bubbly.
- Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley if desired.
