Ingredients
  

For the Chicken
  • 1 pound Boneless Skinless Chicken Thighs substitute chicken breasts, reduce cooking time by 5-7 minutes
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Paprika
For the Vegetables
  • 2 medium Bell Peppers (Red & Yellow) cut into strips
  • 1 medium Red Onion cut into wedges
For the Pineapple Glaze
  • 1 cup Pineapple Chunks fresh or canned and drained
  • 1/4 cup Pineapple Juice use from canned or fresh pineapples
  • 2 tablespoons Soy Sauce (Low-Sodium) substitute with tamari or coconut aminos
  • 1 tablespoon Honey or Brown Sugar maple syrup can be used
  • 1 tablespoon Rice Vinegar or Apple Cider Vinegar
  • 2 cloves Garlic (Minced)
  • 1/2 teaspoon Chili Flakes (optional) adjust to taste
For the Optional Glaze Thickening
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or lightly grease it.
  2. In a mixing bowl, whisk together the soy sauce, pineapple juice, honey, minced garlic, and rice vinegar until well combined.
  3. Pat the boneless skinless chicken thighs dry and place them in a bowl. Pour half of the prepared sauce over the chicken and marinate for at least 15 minutes.
  4. Arrange the marinated chicken thighs evenly on the lined sheet pan. Scatter pineapple chunks, bell pepper strips, and red onion wedges around the chicken.
  5. Drizzle olive oil over the vegetables and toss gently to coat. Bake in the preheated oven for 25-30 minutes, flipping halfway through.
  6. In the last 10 minutes, brush the remaining sauce over the chicken for a shiny finish.
  7. For extra caramelization, switch the oven to broil for the last 2-3 minutes, keeping a close eye on it.
  8. Let it sit for a couple of minutes before serving and garnish with sesame seeds or green onions if desired.
