Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of lean ground beef seasoned with half the spices, cooking for about 5-7 minutes until browned.
  2. In the same skillet, add the cubed Yukon gold potatoes along with the remaining spices and 1 cup of beef stock. Cover and simmer for 8-10 minutes until tender.
  3. Stir in 1 diced yellow onion and 1 diced red bell pepper with the potatoes. Continue cooking for another 5 minutes until vegetables are fragrant.
  4. Return the cooked ground beef to the skillet with vegetables and potatoes. Add in 2 tablespoons of Worcestershire sauce and 1 tablespoon of Dijon mustard, stirring until combined.
  5. Taste the dish and adjust seasoning as needed. Garnish with chopped green onions and serve hot.
