  1. Begin by placing the skirt steak on a clean cutting board. Use a meat mallet to gently pound the beef to a uniform thickness of about half an inch.
  2. In a medium bowl, combine a bottle of beer, 1/4 cup of fresh lime juice, and 2 tablespoons of olive oil. Whisk together and coat the skirt steak in this mixture. Let marinate for at least 30 minutes—ideally overnight.
  3. Prepare the spring onions by cutting them partially through from the root end. Drizzle with 1 tablespoon of olive oil, then season with salt and pepper.
  4. Preheat your grill to medium heat (about 375°F). Remove the skirt steak from the marinade, discarding the excess. Grill both the steak and onions, each side for 2-4 minutes until the steak is medium-rare.
