Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F (200°C). Brush corn, peach wedges, and onion slices with olive oil.
  2. Grill corn and peach slices for about 4-5 minutes, and onion until soft and slightly caramelized for about 5-7 minutes.
  3. In a skillet, heat olive oil over medium heat. Add prosciutto and cook for about 4 minutes until crispy.
  4. Cut the kernels off the cooled corn and chop grilled peaches and onions into coarse pieces. Combine in a mixing bowl.
