  • 12 oz Cherry or Grape Tomatoes halved or quartered
  • 2 medium Cucumbers quartered
  • 1 medium Red Bell Pepper diced
  • cup Red Onion chopped
  • cup Black Olives
  • cup Green Olives
  • 4 oz Feta Cheese crumbled
For the Dressing
  • ¼ cup Extra Virgin Olive Oil or light olive oil
  • 3 tbsp Fresh Lemon Juice or lime juice
  • 2 tbsp Red Wine Vinegar or white wine vinegar
  • 2 tsp Dijon Mustard or yellow mustard
  • 2 cloves Garlic minced
  • 1 tsp Dried Oregano or Italian seasoning
  • ¼ tsp Salt to taste
  • Pepper to taste

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Once boiling, add the bow-tie pasta and cook according to package instructions, usually around 8-10 minutes, until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, and oregano. Whisk until well blended and emulsified.
  3. Add the halved cherry tomatoes, quartered cucumbers, diced red bell pepper, chopped red onion, and olives to the dressing. Gently stir until coated.
  4. Once pasta has cooled, add it to the bowl with the vegetables and dressing. Sprinkle in crumbled feta cheese and toss gently to mix.
  5. Let the salad sit for about 30 minutes or refrigerate for a few hours before serving to enhance the flavors.
