  • 1 lb Ground Chicken or turkey for a leaner option
  • 1 large Egg acts as a binding agent
  • 1/2 cup Feta Cheese crumbled, substitute with low-fat if desired

For the Orzo
  • 1 cup Dried Orzo or whole grain for more fiber
  • 1 tbsp Lemon Zest important for flavor
  • 2 tbsp Lemon Juice
  • 1 tbsp Olive Oil or Butter can use less for a lighter version
For Serving (Optional)
  • 1/4 cup Parmesan Cheese substitute with nutritional yeast for dairy-free

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, egg, crumbled feta, dried oregano, dried basil, onion powder, garlic powder, dried dill, dried parsley, salt, and pepper. Mix until just combined.
  2. Divide the mixture into 15 equal portions and roll each into uniform meatballs, roughly the size of a golf ball.
  3. Heat a skillet over medium heat, add olive oil, and carefully sear the meatballs for 5-6 minutes until golden brown. Cover and cook for another 5-6 minutes until cooked through.
  4. Meanwhile, bring a pot of salted water to a boil. Add dried orzo and cook according to package instructions until al dente, about 8-10 minutes.
  5. Drain the orzo and mix with lemon zest, lemon juice, olive oil or butter, and a sprinkle of salt and pepper.
  6. Serve by placing seasoned orzo on each plate and topping with Greek Chicken Meatballs. Drizzle with extra olive oil if desired.
