Ingredients
  

For the Fruit Salsa
  • 1 cup Strawberries diced, firm and ripe
  • 1 cup Pineapple diced, or substitute with mango
  • 2 medium Kiwi ripe but firm
  • 1 cup Blueberries or substitute with raspberries
  • 1 medium Apple firm variety
  • 2 tablespoons Fresh Lime Juice or replace with lemon juice
  • 2 tablespoons Honey or Maple Syrup to taste
  • 2 tablespoons Fresh Mint optional
For the Cinnamon Chips
  • 4 large Flour Tortillas or gluten-free tortillas
  • 3 tablespoons Unsalted Butter melted, or use vegan butter
  • 1 cup Granulated Sugar or brown sugar
  • 1 tablespoon Ground Cinnamon to taste

Method
 

Prepare the Fruit Salsa
  1. In a large mixing bowl, combine diced strawberries, pineapple, kiwi, blueberries, and apple. Squeeze fresh lime juice over the mixture and drizzle with honey or maple syrup.
  2. Gently fold the ingredients to mix without mashing the fruits. Cover and refrigerate for at least 30 minutes.
Bake the Cinnamon Chips
  1. Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper.
  2. Brush both sides of each flour tortilla with melted butter, then stack and cut into wedges.
  3. Mix sugar and cinnamon, sprinkle it over the tortilla wedges. Bake for 8-10 minutes, flipping halfway.
  4. Remove chips and cool on a rack to maintain crispiness.
Serve
  1. Serve the warm, crispy cinnamon chips alongside the chilled fruit salsa.
