  • 2 tablespoons fresh chives can substitute with green onions
  • ½ teaspoon garlic powder can adjust according to taste
  • ½ teaspoon salt can use sea salt or pink salt
Salad
  • 2 cups frozen corn or fresh corn cut from the cob
  • 1 pint cherry tomatoes halved
  • 2 mini cucumbers sliced into bite-sized pieces
  • 1 piece orange bell pepper chopped into small cubes
  • ¼ piece red onion finely diced
  • optional amount shaved Parmesan or nutritional yeast for dairy-free option

Method
 

Make the Dressing
  1. In a mini food processor, combine olive oil, lemon juice, and honey. Add fresh mint, basil, chives, garlic powder, and salt. Blend until smooth and vibrant.
Prepare the Corn
  1. Microwave frozen corn for 2-3 minutes to defrost. If using fresh, cut kernels from the cob to yield about 2 cups.
Chop the Veggies
  1. Halve cherry tomatoes, slice cucumbers, chop bell pepper, and finely dice red onion.
Assemble the Salad
  1. In a large mixing bowl, combine corn, tomatoes, cucumbers, bell pepper, and red onion. Drizzle vinaigrette and toss to combine.
