  • 6 ears Fresh Corn Kernels Alternatively, use 4 cups frozen
  • 1 cup Cherry Tomatoes Halved, or substitute with seasonal tomatoes
  • 1 small Red Onion Soak in ice water for 10 minutes
  • 1 cup Fresh Cilantro Parsley works as a substitute
  • 2 medium Avocado Use ripe but firm avocados
For the Dressing
  • 1/4 cup Lime Juice Fresh lime adds brightness
  • 1/4 cup Olive Oil Use any neutral oil
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation Steps
  1. Start by shucking 6 ears of fresh corn or measuring 4 cups of frozen kernels.
  2. If using fresh corn, grill for 10-15 minutes, or boil for 5-7 minutes. Once cooked, let cool and slice kernels off.
  3. Dice one or two ripe avocados, and halve cherry tomatoes. Soak finely chopped red onion in ice water for 10 minutes before draining.
  4. Add all ingredients including a generous handful of chopped cilantro into the bowl with corn.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  6. Pour dressing over corn and vegetable mixture. Gently toss everything until well coated.
  7. Enjoy immediately or chill for 30 minutes to meld flavors.
