  • 1 head Romaine Lettuce Chopped into bite-sized pieces
  • 1 cup Black Beans Drained
  • 1 cup Corn Drained
  • 1 cup Cherry Tomatoes Halved
  • 1 each Red Bell Pepper Diced
  • 0.5 each Red Onion Thinly sliced
  • 0.5 cup Shredded Cheddar Cheese Optional
  • 0.25 cup Fresh Cilantro Chopped
  • 1 cup Tortilla Strips Add just before serving
For the Dressing
  • 0.25 cup Olive Oil
  • 2 tablespoons Lime Juice
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Garlic Powder
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Thoroughly wash and dry the romaine lettuce, then chop into bite-sized pieces and set in a large mixing bowl.
  2. Slice the cherry tomatoes in half, dice the red bell pepper, and thinly slice the red onion. Set aside.
  3. In a small bowl or jar, combine olive oil, lime juice, apple cider vinegar, honey, ground cumin, chili powder, garlic powder, salt, and black pepper. Whisk or shake well.
  4. In the bowl with lettuce, add black beans, corn, cherry tomatoes, bell pepper, onion, cilantro, and optional cheese. Gently fold together.
  5. Drizzle dressing over salad ingredients and gently toss until coated.
  6. Sprinkle tortilla strips over the top and serve immediately.
