  • 3 large Eggs Separate yolks and whites.
  • 1 cup Full-Fat Cottage Cheese Blend until smooth.
  • 2 tablespoons Cornstarch Don't skip it!
  • 1 teaspoon Cream of Tartar Can substitute with lemon juice.
  • 2 tablespoons Powdered Sweetener Optional; use erythritol or allulose.
  • 1 teaspoon Vanilla Extract Optional; recommended.
  • 1 tablespoon Lemon Zest Optional; adds brightness.
  • 1 cup Fresh Blueberries Pat dry if using frozen.

Method
 

Directions
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Drain and blend the full-fat cottage cheese until smooth.
  3. Beat the egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, mix egg yolks with cottage cheese and optional ingredients.
  5. Gently fold the egg yolk mixture into the whipped egg whites.
  6. Carefully fold in the fresh blueberries.
  7. Scoop the batter onto the baking sheet, spacing 2 inches apart.
  8. Bake for 25-30 minutes until golden brown and firm to the touch.
  9. Allow to cool slightly before serving.
