Method
 

Marinating and Cooking
  1. In a mixing bowl, combine smoked paprika, cumin, olive oil, lime juice, and a pinch of salt. Add the chicken breasts, ensuring they are fully coated in the marinade. Cover and let marinate in the refrigerator for at least 20 minutes.
  2. Preheat your grill or skillet to medium-high heat (around 400°F). Lightly coat the skillet with oil if needed.
  3. Place the marinated chicken breasts on the grill. Cook for 6-7 minutes on one side, flip, and cook another 6-7 minutes until internal temperature reaches 165°F. Let rest for a few minutes.
  4. Prepare your choice of grains according to package instructions, generally simmering until tender, about 15 minutes.
  5. In a large serving bowl, start with a scoop of cooked grains. Slice the grilled chicken and layer on top. Add diced avocado and corn.
  6. Drizzle the cilantro-lime dressing over the assembled bowls and serve fresh or chilled.
