Step-by-Step Instructions
  1. Soften the cream cheese by letting it sit at room temperature for about 30 minutes.
  2. In a mixing bowl, combine olives, roasted red peppers, garlic, salami or pepperoni, and parsley or basil.
  3. Divide the softened cream cheese into two portions and shape one half into a log.
  4. Press half of the antipasto mixture onto the log's surface.
  5. Wrap the log tightly in plastic wrap and refrigerate for at least 1 hour.
  6. Remove from the refrigerator, unwrap, and place on a serving platter. Optional: drizzle olive oil and sprinkle with red pepper flakes.
  7. Slice the log into pieces and serve with crackers, cucumber rounds, or veggie sticks.
