- Preheat your oven to 375°F (190°C).
- Cube the eggplant, toss with 4 tablespoons of olive oil and 3/4 teaspoon of kosher salt, spread on a baking dish, and roast for 30 minutes.
- Pulse the cooled roasted eggplant in a food processor until finely chopped and transfer to a large mixing bowl.
- Add seasoned breadcrumbs, grated Parmesan, parsley, whisked egg and yolk, garlic, black pepper, and onion powder to the bowl and mix until well-combined.
- Scoop out 2-tablespoon portions and form them into meatballs, aiming for about 20 meatballs.
- Heat 2 tablespoons of olive oil in a skillet, sauté the meatballs in batches for about 6-7 minutes until golden brown.
- Spread marinara sauce in the baking dish, place sautéed meatballs in the sauce, and dollop ricotta cheese over the top.
- Bake for 15-18 minutes until the sauce is bubbly and meatballs are heated through, then serve warm.
