  • 200 grams Tomato Puree or crushed tomatoes
  • 2 tablespoons Tamari or regular soy sauce
  • 150 grams Red Lentils cooking times may vary with other lentils
  • 400 grams Chopped Tomatoes or fresh during season
  • 500 ml Vegetable Stock homemade for better taste
For the Topping
  • 4 medium Baking Potatoes or sweet potatoes for sweetness

Method
 

Step-by-Step Instructions for Easy Vegan Hotpot with Lentils
  1. Preheat your oven to 180°C (350°F). Gather your ingredients and prep the vegetables.
  2. In a large skillet, add olive oil and sauté diced onion and carrot for 4-5 minutes.
  3. Add minced garlic and corn flour to the skillet, stirring for another 1-2 minutes.
  4. Mix in tomato puree, tamari, red lentils, chopped tomatoes, and half of the vegetable stock. Bring to a boil, then simmer for 15 minutes.
  5. Slice baking potatoes to about 0.5 cm thickness and set aside.
  6. Transfer the lentil mixture into a baking dish and layer the sliced potatoes on top. Drizzle with olive oil and season.
  7. Cover with foil and bake for 30 minutes, then uncover and bake for another 20 minutes until potatoes are crispy.
  8. Let the hotpot rest for a few minutes before serving warm with a salad or crusty bread.
