- Preheat your oven to 180°C (350°F). Gather your ingredients and prep the vegetables.
- In a large skillet, add olive oil and sauté diced onion and carrot for 4-5 minutes.
- Add minced garlic and corn flour to the skillet, stirring for another 1-2 minutes.
- Mix in tomato puree, tamari, red lentils, chopped tomatoes, and half of the vegetable stock. Bring to a boil, then simmer for 15 minutes.
- Slice baking potatoes to about 0.5 cm thickness and set aside.
- Transfer the lentil mixture into a baking dish and layer the sliced potatoes on top. Drizzle with olive oil and season.
- Cover with foil and bake for 30 minutes, then uncover and bake for another 20 minutes until potatoes are crispy.
