For the Dressing
  • 1/3 cup Olive Oil Use high-quality extra virgin.
  • 2 tbsp Basil Paste Fresh basil is an alternative.
  • 3.5 tbsp White Balsamic Vinegar Apple cider vinegar is a good substitute.
  • 1 tbsp Garlic Minced; garlic powder can be substituted.
  • 1 tsp Italian Seasoning
  • 1/4 tsp Red Pepper Flakes Omit for milder flavor.
  • Salt & Black Pepper To taste.

Method
 

Step-by-Step Instructions
  1. Prepare the Kale by removing the stems and slicing it into thin strips. Massage with olive oil.
  2. Make the Dressing by whisking together olive oil, basil paste, white balsamic vinegar, garlic, Italian seasoning, red pepper flakes, salt, and pepper.
  3. Cook the Pasta in salted boiling water until al dente, then drain and rinse under cold water.
  4. Combine cooled pasta, massaged kale, feta, Parmesan, and sun-dried tomatoes in a mixing bowl.
  5. Dress the Salad by pouring the dressing over and tossing gently.
  6. Let It Sit covered at room temperature for 30 minutes.
