For the Enchiladas
  • 8 Tortillas Corn or flour, lightly fried
  • 2 cups Enchilada Sauce Homemade or store-bought
  • 2 cups Cheese Cheddar, Monterey Jack, or Mexican blend

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat oil and brown the ground beef with onions for 5-7 minutes.
  3. Stir in garlic, cumin, and chili powder; cook for an additional minute.
  4. Heat tortillas for about 30 seconds on each side until pliable.
  5. Lay a tortilla flat, spoon the beef filling, and roll tightly; place seam-side down in a baking dish.
  6. Pour enchilada sauce over the tortillas, and top with cheese.
  7. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  8. Remove from the oven and let sit a few minutes before serving.
