- Begin by preparing your ingredients. Chop one onion, two carrots, and one or two celery stalks into small, uniform pieces. Mince two cloves of garlic and shred about two cups of cooked turkey if it's not pre-prepared.
- In your crock pot, add the chopped onions, carrots, celery, shredded turkey, minced garlic, and about six cups of chicken or turkey stock. Add thyme, Italian herbs, kosher salt, and pepper.
- Cover and cook on HIGH for three hours.
- After two and a half hours, stir in two cups of egg noodles and cook for an additional 30 minutes.
- Remove thyme sprigs before serving, and serve warm with optional garnishes.
