- Caramelize onions by heating 2 tablespoons of olive oil in a medium skillet. Add sliced onions and cook for 8-10 minutes, stirring occasionally for 20-30 minutes until golden. Mix in minced garlic and seasonings in the last 5 minutes.
- Preheat your oven to 475°F. Roll out the fresh pizza dough on a floured surface into a 12-14 inch round. Transfer it to parchment paper and pierce the center to prevent bubbling.
- Spread canned pumpkin puree over the prepared dough, leaving a ½ inch edge. Top with caramelized onions and garlic mixture, and finally sprinkle gouda cheese on top.
- Transfer the pizza on parchment to the preheated oven. Bake for 12-15 minutes until the crust is golden, and the gouda has melted.
- Remove from the oven and let cool for a minute. Garnish with parsley if desired. Slice into 8 pieces and serve warm.
