  • 2 Eggs Can substitute with 1 tbsp flaxseed meal + 2.5 tbsp water for egg-free
  • 2 tbsp Olive Oil
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • Italian Seasoning Optional

Step-by-Step Instructions
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate two medium zucchinis and squeeze out excess moisture using a kitchen towel.
  3. In a mixing bowl, combine flour, baking powder, salt, and garlic powder; whisk until blended.
  4. Fold in the drained zucchini, mozzarella cheese, Parmesan cheese, eggs, olive oil, and Italian seasoning.
  5. Turn dough onto a floured surface, knead gently, and roll into a rectangle about ½ inch thick.
  6. Slice the dough into strips ½ to ¾ inch wide and arrange them on the prepared baking sheet.
  7. Bake for 15-18 minutes, until golden brown and slightly crispy along the edges.
  8. Remove from oven and let cool for a few minutes before serving with dipping sauces.
