Prepare the Sauce
- Mix together 2 tablespoons of low-sodium soy sauce or tamari, 1 tablespoon of Thai chili sauce, 1 tablespoon of toasted sesame oil, and 1 teaspoon of Chinese 5-spice powder in a small bowl. Set aside.
Cook the Beef
- Heat a skillet over medium-high heat and add 1 pound of ground beef, allowing it to brown for about 4-5 minutes. Stir in 2 minced garlic cloves and 1 tablespoon of freshly grated ginger and sauté for 2 minutes.
- Pour in the prepared sauce, stirring to coat the meat, and cook for an additional 2-3 minutes until glazed.
Warm the Tortillas
- Warm your tortillas in a dry skillet over low heat for about 30 seconds each side.
- If using rice paper, soften them by dipping in warm water for 10-15 seconds.
Assemble the Rolls
- Place a warmed tortilla or softened rice paper on a clean surface. Add a scoop of beef mixture, followed by cucumber, cilantro, Thai basil, green onions, and peanuts. Roll tightly.
Make Dipping Sauce (Optional)
- Whisk together 1 tablespoon of honey, 1 tablespoon of ketchup, 1 teaspoon of chili paste, lime juice and zest, 1 teaspoon of rice vinegar, and an extra splash of tamari.
Serve and Enjoy
- Arrange the assembled rolls on a serving platter and serve warm, optionally with the dipping sauce.
