Method
 

Mixing and Grilling
  1. In a large bowl, combine the grilled corn kernels, mayonnaise, crumbled feta, diced red onion, cotija cheese, chopped fresh cilantro, lime juice, minced garlic, chili powder, paprika, and a sprinkle of kosher salt and black pepper. Stir well until evenly mixed, and taste to adjust seasoning.
  2. Preheat your grill to high heat, aiming for around 450°F to 500°F.
  3. Generously season both sides of the ribeye steaks with kosher salt and ground black pepper. Allow the steaks to sit at room temperature for about 10 minutes.
  4. Place the seasoned steaks on the hot grill and close the lid. Grill for about 3-4 minutes per side until they develop a lovely char and reach your desired doneness.
  5. Once grilled to perfection, carefully remove the steaks from the grill and set them on a cutting board. Let them rest for approximately 5 minutes.
  6. Begin layering your bowls by first adding a generous scoop of cooked jasmine or basmati rice at the bottom. Next, slice the rested ribeye steaks thinly against the grain and lay them over the rice. Top it off with the zesty corn salad. Consider adding cherry tomatoes and jalapeños.
