Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss cauliflower florets with olive oil, cumin, and paprika.
  3. Spread cauliflower on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden brown.
  4. In a separate bowl, combine shredded cabbage and carrots.
  5. Just before serving, mix lime juice and mayo or yogurt into the slaw.
  6. Warm tortillas in a skillet for 30 seconds on each side.
  7. Assemble by layering roasted cauliflower, slaw, and optional toppings on each tortilla.
