Method
 

Steps
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
  2. Cream together butter and light brown sugar until light and fluffy. Mix in egg yolk and vanilla extract.
  3. Gradually stir in flour, oats, and salt. Mix until a cohesive dough forms.
  4. Press the dough into a greased pie dish and bake for 15 minutes until golden brown. Let cool.
  5. Whisk together eggs, egg yolk, heavy cream, whole milk, sugar, vanilla bean paste, nutmeg, cinnamon, and salt until smooth.
  6. Pour the custard mixture into the cooled crust, ensuring even distribution.
  7. Bake in the oven for about 30 minutes until the edges are set, and the center jiggles slightly.
  8. Cool on a wire rack for at least 1 hour before serving. Optionally prepare praline sauce to drizzle.
