- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced yellow onion and sauté for about 2 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
- Add lean ground beef to the skillet, breaking it apart. Season with Italian seasoning, sweet paprika, salt and black pepper. Cook for 6-8 minutes until browned.
- Fold in fresh baby spinach in batches until just wilted, about a minute. Drain any excess liquid from the mixture.
- In a mixing bowl, combine cooked frozen cauliflower rice, sour cream, room temperature butter, and dried basil. Mix until creamy, adding a splash of milk if needed.
- Fold the sautéed ground beef and spinach mixture into the creamy cauliflower base until well combined.
- Transfer the mixture into a greased baking dish and sprinkle shredded cheese over the top.
- Bake in the preheated oven for about 22-25 minutes until the cheese is melted and bubbly.
- Remove from oven and let it rest for 5 minutes before slicing.
