  • 2 tablespoons olive oil feel free to swap with any neutral cooking oil
  • 1 medium yellow onion white onion works as a suitable replacement
  • 2 cloves garlic fresh minced garlic boosts flavor
  • 1 pound lean ground beef consider using ground turkey or chicken for a lighter option
  • 1 teaspoon Italian seasoning infuses Mediterranean flavor
  • 0.5 teaspoon sweet paprika smoked paprika can be used for an extra kick
  • to taste salt and black pepper adjust to taste
  • 4 cups baby spinach other leafy greens can easily be used
  • 3 cups frozen cauliflower rice cook it first for best texture
  • 0.5 cup sour cream plain yogurt is a great alternative
  • 2 tablespoons butter room temperature butter mixes more easily
  • 1 teaspoon dried basil can switch with dried oregano or parsley
  • splash milk add sparingly if mixture feels too thick

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced yellow onion and sauté for about 2 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add lean ground beef to the skillet, breaking it apart. Season with Italian seasoning, sweet paprika, salt and black pepper. Cook for 6-8 minutes until browned.
  4. Fold in fresh baby spinach in batches until just wilted, about a minute. Drain any excess liquid from the mixture.
  5. In a mixing bowl, combine cooked frozen cauliflower rice, sour cream, room temperature butter, and dried basil. Mix until creamy, adding a splash of milk if needed.
  6. Fold the sautéed ground beef and spinach mixture into the creamy cauliflower base until well combined.
  7. Transfer the mixture into a greased baking dish and sprinkle shredded cheese over the top.
  8. Bake in the preheated oven for about 22-25 minutes until the cheese is melted and bubbly.
  9. Remove from oven and let it rest for 5 minutes before slicing.

Notes
