Ingredients

  • 1 medium Avocado Greek yogurt can lighten the sauce.
  • 2 medium Tomatillo Green tomatoes can be used if unavailable.
  • 2 tablespoons Lime Juice Lemon juice is a suitable substitute.

Method
 

Prep Skewers
  1. Soak six wooden skewers in water for at least 30 minutes.
  2. Gather the ingredients and prepare your workspace.
Marinate Chicken
  1. Whisk together ranch dressing, ranch seasoning, and minced garlic.
  2. Cut the chicken into 1.5-inch pieces and add to the marinade.
  3. Let the chicken marinate for at least 20 minutes.
Preheat Oven
  1. Preheat your oven to medium broil (about 400°F).
  2. Line a baking sheet with aluminum foil.
Assemble Skewers
  1. Thread the chicken onto the soaked skewers, leaving space between each piece.
  2. Arrange the skewers on the lined baking sheet.
Cook Chicken
  1. Place the baking sheet on the top rack and broil for 25 to 30 minutes.
  2. Turn the skewers every 10 minutes and monitor internal temperature for 165°F.
Make Sauce
  1. Blend ranch dressing, cilantro, poblano pepper, avocado, tomatillo, and lime juice until smooth.
  2. Season with salt and pepper, then refrigerate until ready to serve.
Serve
  1. Remove skewers from the oven and plate them.
  2. Drizzle with avocado ranch sauce and serve with a side salad.
