- In a medium bowl, blend together Greek yogurt, chocolate chips, maple syrup, and vanilla extract until well combined and smooth.
- If the yogurt mixture is too runny, place it in the freezer for 15 to 20 minutes to thicken.
- Select soft chocolate chip cookies and spread a layer of the chilled yogurt filling onto the bottom of one cookie, then top with another cookie.
- Line a baking tray with parchment paper and place each sandwich on the tray, then freeze for 2 to 3 hours.
- Once frozen, serve straight from the freezer for best texture.
