Method
 

Preparation
  1. In a medium bowl, blend together Greek yogurt, chocolate chips, maple syrup, and vanilla extract until well combined and smooth.
  2. If the yogurt mixture is too runny, place it in the freezer for 15 to 20 minutes to thicken.
  3. Select soft chocolate chip cookies and spread a layer of the chilled yogurt filling onto the bottom of one cookie, then top with another cookie.
  4. Line a baking tray with parchment paper and place each sandwich on the tray, then freeze for 2 to 3 hours.
  5. Once frozen, serve straight from the freezer for best texture.
