Preparation Steps
- Start by shredding or chopping 2 cups of cooked chicken into small pieces using your hands or a fork.
- In a large mixing bowl, combine 1 cup of cottage cheese, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Mix thoroughly.
- Add 2 stalks of finely chopped celery, 1/4 cup of finely diced red onion, and 1/3 cup of dried cranberries to the cottage cheese mixture. Stir gently.
- Gently fold the prepared chicken into the mixture from the previous step.
- While your chicken salad is resting, slice 4 sandwich rolls or buns horizontally and optionally toast them.
- On the bottom half of each toasted roll, place 1 leaf of romaine or green leaf lettuce. Spoon the chicken salad mixture over it.
- Serve your Cottage Cheese Chicken Salad Sandwiches immediately or store the chicken salad separately in an airtight container.

Notes
For smoother texture, blend cottage cheese before mixing. Always toast sandwich rolls to enhance crunch. Store chicken salad and rolls separately to maintain freshness.
