Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped red onion and red bell pepper for about 5 minutes until softened.
  3. Add ground cumin, chili powder, kosher salt, ground black pepper, and minced garlic. Stir and cook for an additional minute.
  4. Stir in diced tomatoes with green chiles, black beans, frozen corn, shredded chicken, and salsa. Mix well and heat for 3-4 minutes.
  5. In a baking dish, layer half of the crushed tortilla chips at the bottom. Spread the chicken mixture over the chips.
  6. Sprinkle the remaining crushed tortilla chips over the chicken mixture, then top with shredded cheese.
