Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. Melt the butter in a medium saucepan over low heat until fully liquid.
  3. Whisk together the melted butter and granulated sugar until smooth and glossy.
  4. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, combine flour, cocoa powder, salt, and baking powder, whisking until mixed.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  7. Pour brownie batter into the prepared pan and bake for 25-30 minutes.
  8. Once baked, cool the brownies completely in the pan before slicing into squares.
  9. Assemble sandwiches by scooping ice cream onto one brownie square and topping with another square.
  10. Serve immediately or wrap individually in parchment and freeze for later.
