Preparation
- In a small saucepan, add blueberries and maple syrup. Cook over medium heat for about 1 minute, until softened. Let cool and refrigerate.
- In a mixing bowl, combine oats, chia seeds, and water or milk. Add yogurt, vanilla extract, and salt. Mix well to ensure oats are submerged.
- Cover with plastic wrap or transfer to airtight containers. Refrigerate for at least 3 hours or overnight.
- To serve, layer blueberry sauce at the bottom of a glass, followed by the oat mixture. Garnish with extra blueberries and maple syrup if desired.
