- In a large mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheddar cheese, and salsa, along with garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
- Warm the tortillas slightly, then spoon 2-3 tablespoons of the filling into each tortilla and roll them tightly with the seam side down. Place on the prepared baking sheet.
- Lightly brush the tops of the taquitos with olive oil or spray them with cooking spray to promote browning.
- Bake for 15-18 minutes or until golden brown and crispy.
- Remove from the oven, let cool slightly, and serve with dips like sour cream or guacamole.
