  • 2 cups shredded cooked chicken use rotisserie or leftover chicken
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese or Monterey Jack
  • 1/2 cup salsa your choice of variety
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin optional
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
For the Taquitos
  • 8 tortillas flour or corn
  • 2 tbsp olive oil or cooking spray

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded chicken, softened cream cheese, shredded cheddar cheese, and salsa, along with garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
  3. Warm the tortillas slightly, then spoon 2-3 tablespoons of the filling into each tortilla and roll them tightly with the seam side down. Place on the prepared baking sheet.
  4. Lightly brush the tops of the taquitos with olive oil or spray them with cooking spray to promote browning.
  5. Bake for 15-18 minutes or until golden brown and crispy.
  6. Remove from the oven, let cool slightly, and serve with dips like sour cream or guacamole.

Notes
