Steps to Make the Bars
  1. Preheat your oven to 350°F (175°C). Gather and measure out all your ingredients.
  2. Combine old-fashioned rolled oats, all-purpose flour, softened butter, salt, baking soda, and packed brown sugar in a mixing bowl.
  3. In a medium saucepan, combine chopped rhubarb, granulated sugar, cornstarch, and water over medium heat. Stir gently until simmering and thickened, about 5-10 minutes. Stir in vanilla extract.
  4. Press three-quarters of the crumb mixture into a greased 8x8 inch baking dish. Pour rhubarb filling over the crust and sprinkle the remaining crumb mixture on top.
  5. Bake for 30-40 minutes until edges are golden brown and filling is set.
  6. Cool in the pan for at least 30 minutes before slicing into bars.

Notes
