Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your cupcake tin with liners.
  2. In a large bowl, combine flour, sugar, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy.
  3. Add eggs, vanilla extract, and sour cream to the creamed mixture, mixing until combined. Gradually mix in the dry ingredients.
  4. For the cheesecake filling, beat cream cheese until smooth. Gradually add powdered sugar and vanilla bean paste, mixing until combined. Add egg and mix well.
  5. Fill cupcake liners halfway with batter, add dollop of cheesecake filling, then top with more batter until 3/4 full.
  6. Bake for 20-25 minutes, checking with a toothpick for doneness. Cool in the pan for 5 minutes before transferring to a wire rack.
  7. Once cooled, sprinkle sugar on top of each cupcake and caramelize with a kitchen torch until golden.
