- Preheat your oven to 350°F (175°C) and prepare your cupcake tin with liners.
- In a large bowl, combine flour, sugar, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy.
- Add eggs, vanilla extract, and sour cream to the creamed mixture, mixing until combined. Gradually mix in the dry ingredients.
- For the cheesecake filling, beat cream cheese until smooth. Gradually add powdered sugar and vanilla bean paste, mixing until combined. Add egg and mix well.
- Fill cupcake liners halfway with batter, add dollop of cheesecake filling, then top with more batter until 3/4 full.
- Bake for 20-25 minutes, checking with a toothpick for doneness. Cool in the pan for 5 minutes before transferring to a wire rack.
- Once cooled, sprinkle sugar on top of each cupcake and caramelize with a kitchen torch until golden.
