Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and equipment.
  2. Peel and thinly slice the sweet potatoes and onion to about 1/8 inch thick.
  3. Melt 2 tablespoons of butter in a medium saucepan over medium heat, then sauté minced garlic for 1-2 minutes.
  4. Add 1 cup of heavy cream, thyme, salt, pepper, and nutmeg into the saucepan and warm gently.
  5. Stir in half of the shredded cheddar and parmesan cheese until melted and smooth.
  6. Grease a 9x13 inch baking dish with olive oil.
  7. Layer sweet potatoes and onion slices in the dish, drenching with cheese sauce in between layers.
  8. Top with remaining cheddar and parmesan cheese.
  9. Cover with aluminum foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes.
  10. Let rest for 10-15 minutes before serving, garnish with fresh parsley.
