- Preheat your oven to 375°F (190°C). Gather all your ingredients and equipment.
- Peel and thinly slice the sweet potatoes and onion to about 1/8 inch thick.
- Melt 2 tablespoons of butter in a medium saucepan over medium heat, then sauté minced garlic for 1-2 minutes.
- Add 1 cup of heavy cream, thyme, salt, pepper, and nutmeg into the saucepan and warm gently.
- Stir in half of the shredded cheddar and parmesan cheese until melted and smooth.
- Grease a 9x13 inch baking dish with olive oil.
- Layer sweet potatoes and onion slices in the dish, drenching with cheese sauce in between layers.
- Top with remaining cheddar and parmesan cheese.
- Cover with aluminum foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes.
- Let rest for 10-15 minutes before serving, garnish with fresh parsley.
