Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Whip until soft peaks form.
  2. Mix in 3 tablespoons of amaretto liqueur, 3 tablespoons of cherry juice, and 1 teaspoon of vanilla extract until smooth.
  3. In a separate bowl, combine ¼ cup of granulated sugar and ¼ cup of cherry preserves, then fold into the mascarpone mixture.
  4. Chop 1 cup of fresh cherries and gently fold into the mascarpone mixture.
  5. In a shallow dish, combine ½ cup each of cherry juice and amaretto. Stir to mix.
  6. Dip the ladyfingers quickly into the cherry and amaretto mixture and arrange in a single layer in a 9x13-inch baking dish.
  7. Spread half of the mascarpone mixture evenly over the ladyfingers.
  8. Repeat the dipping and layering with remaining ladyfingers and mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours, preferably overnight.
  10. Dust the top with cocoa powder and add shaved dark chocolate before serving.
