- In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Whip until soft peaks form.
- Mix in 3 tablespoons of amaretto liqueur, 3 tablespoons of cherry juice, and 1 teaspoon of vanilla extract until smooth.
- In a separate bowl, combine ¼ cup of granulated sugar and ¼ cup of cherry preserves, then fold into the mascarpone mixture.
- Chop 1 cup of fresh cherries and gently fold into the mascarpone mixture.
- In a shallow dish, combine ½ cup each of cherry juice and amaretto. Stir to mix.
- Dip the ladyfingers quickly into the cherry and amaretto mixture and arrange in a single layer in a 9x13-inch baking dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
- Repeat the dipping and layering with remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Dust the top with cocoa powder and add shaved dark chocolate before serving.
