Preparation Steps
- In a large mixing bowl, whip heavy cream until soft peaks form. Gradually fold in mascarpone cheese until smooth and creamy.
- Gently incorporate amaretto liqueur, cherry juice, and vanilla extract into the cream mixture until well combined.
- Mix sugar and cherry preserves in a separate bowl, then fold into cream mixture until slightly thickened.
- Chop fresh cherries and carefully fold them into the cream mixture.
- In a shallow dish, mix amaretto liqueur and cherry juice for dipping ladyfingers.
- Quickly dip each ladyfinger in the amaretto-cherry juice mixture, ensuring they are soaked only for a second.
- In a baking dish, create a layer of half the dipped ladyfingers, then spoon half of the cream mixture over them.
- Add another layer of remaining dipped ladyfingers on top, followed by the rest of the cream mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and sprinkle with shaved dark chocolate.
