Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C). Gather ingredients and prepare your baking sheet.
  2. Combine cauliflower florets and diced sweet potatoes on the baking sheet. Drizzle with olive oil and sprinkle in curry powder, cumin, salt, and pepper. Toss until evenly coated.
  3. Roast vegetables for 25-30 minutes, turning halfway through. They are ready when tender and slightly browned.
  4. In a small bowl, whisk together Greek yogurt, lemon juice, maple syrup (or honey), curry powder, and a pinch of salt and pepper. Set aside.
  5. Once cooled, transfer vegetables to a large mixing bowl. Add chopped red onion, cilantro, and optional pumpkin seeds or almonds.
  6. Pour the creamy dressing over the warm vegetable mixture and toss gently until well combined.
