- Wash thoroughly and dice 3 cups of cucumbers, leaving the peel on. Pat dry with a paper towel and place in a large mixing bowl.
- In the same bowl, add 1 cup of cheddar cheese, ½ cup of crumbled bacon, and ½ cup of green onions. Mix together with a spatula until evenly combined.
- In a separate bowl, whisk together 1 cup of sour cream, ½ cup of mayonnaise, and the ranch seasoning mix until smooth. Add salt and pepper to taste.
- Pour the dressing over the cucumber mixture. Gently fold together until well-coated. Cover and refrigerate for at least 30 minutes.
- Once chilled, stir the salad gently. Garnish with dill or parsley if desired and serve.
