- Thinly peel and slice the Persian cucumbers using a mandoline slicer, aiming for 1/8-inch thickness. Set aside on a paper towel to absorb moisture.
- Take a piece of lavash bread, lay it flat, and spread a layer of cream cheese, leaving 2 inches at one end without cheese.
- Layer thin cucumber slices over the cream cheese, optionally adding herb-infused cream cheese or smoked salmon. Press gently.
- Roll the lavash tightly starting from the cream cheese end, applying gentle pressure as you go.
- Slice the completed roll into four equal pieces using a sharp serrated knife.
- Arrange rolls on a platter, secure with sandwich picks if desired, and serve or refrigerate for later.
