- Spray the interior of your slow cooker with olive oil to prevent sticking.
- Place the chicken breasts in a single layer in the bottom of the slow cooker.
- Pour marinara sauce over the chicken and sprinkle the seasonings evenly on top.
- Add the chicken broth, and cover the slow cooker.
- Cook on LOW for approximately 4 hours.
- Remove the chicken and shred into bite-sized pieces, return to slow cooker.
- Stir in tortellini, mozzarella cheese, and heavy cream until well combined.
- Cook on LOW for an additional 30 minutes.
- Fold in baby spinach, and cook for an additional 10 minutes with the lid off.
- Stir in grated Parmesan cheese and adjust seasoning to taste.
