Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Take the crumbled feta and pile it into a small mound on the prepared baking sheet.
  3. Crack a large egg directly into the center of the feta mound, avoiding breaking the yolk.
  4. Lightly spray the exposed egg whites with olive oil spray, then sprinkle dried oregano and red pepper flakes over the feta and egg.
  5. Place the baking sheet in your oven and bake for 8-10 minutes until the feta is golden and crispy.
  6. Once done, let it cool for a minute and warm up your tortilla or toast.
  7. Spoon the smashed avocado over the baked egg and feta, squeeze lemon juice, add pickled onions and drizzle chili oil to taste.
  8. Serve immediately for maximum crispiness and flavor.
