  • 1 cup cheddar cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup all-purpose flour or almond meal for gluten-free
  • 2 large eggs beaten well
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
For Frying
  • 1/4 cup olive oil for frying

Equipment

  • Frying pan
  • mixing bowl

Method

Step-by-Step Instructions
  1. Wash the broccoli florets thoroughly, then steam or boil them for 5–7 minutes until tender but still vibrant green. Drain well and let cool slightly.
  2. Finely chop the cooled broccoli and transfer it to a large mixing bowl.
  3. Add the shredded cheddar cheese, grated Parmesan cheese, all-purpose flour (or almond meal), beaten eggs, finely chopped onion, minced garlic, salt, and pepper to the bowl. Mix until all ingredients are well combined.
  4. Shape the mixture into patties, about 2-3 inches wide and half an inch thick. Repeat until you’ve formed 8-10 patties.
  5. Heat olive oil in a large frying pan over medium heat until it shimmers. Carefully add the shaped patties in a single layer.
  6. Fry each side for 3–4 minutes, or until golden brown and crispy. Flip gently with a spatula.
  7. Remove the patties from the pan and place them on a paper towel-lined plate to absorb excess oil. Serve warm.
