  2. Make Coatings: In three shallow bowls, combine flour, salt, and black pepper in the first bowl. Beat eggs in the second bowl. Mix coconut and panko breadcrumbs in the third bowl.
  3. Heat Oil: In a skillet, heat 1 inch of vegetable oil to 350°F (175°C).
  4. Bread Shrimp: Dredge each shrimp in flour, then dip in eggs, and coat with coconut and panko mixture.
  5. Fry: Fry the breaded shrimp in batches for 2-3 minutes on each side until golden brown.
