Preparation
- Preheat your oven to 350℉ (175℃) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine eggs, finely chopped dandelion greens, grated butternut squash, almond flour, sea salt, minced shallots, and minced garlic.
- Mix everything thoroughly with your hands until well combined, about 2-3 minutes.
- Scoop out ¼ cup of the mixture, shape it into a patty, and place it on the baking sheet, spacing each fritter about an inch apart.
- Brush each fritter lightly with extra-virgin olive oil and bake for 15 minutes.
- Carefully flip each fritter and brush the other side with more olive oil, then bake for an additional 12 minutes.
- While the fritters are baking, mix goat yogurt with fresh lemon juice in a small bowl to prepare the dipping sauce.
- Serve the fritters warm with the yogurt dip and garnished with freshly chopped chives.
