Method
 

Preparation
  1. Preheat your oven to 350℉ (175℃) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, combine eggs, finely chopped dandelion greens, grated butternut squash, almond flour, sea salt, minced shallots, and minced garlic.
  3. Mix everything thoroughly with your hands until well combined, about 2-3 minutes.
  4. Scoop out ¼ cup of the mixture, shape it into a patty, and place it on the baking sheet, spacing each fritter about an inch apart.
  5. Brush each fritter lightly with extra-virgin olive oil and bake for 15 minutes.
  6. Carefully flip each fritter and brush the other side with more olive oil, then bake for an additional 12 minutes.
  7. While the fritters are baking, mix goat yogurt with fresh lemon juice in a small bowl to prepare the dipping sauce.
  8. Serve the fritters warm with the yogurt dip and garnished with freshly chopped chives.
