Ingredients
  

For the Soup Base
  • 2 cans Cannellini beans 28oz each; substitute with navy or Great Northern beans if preferred.
  • 1 medium Onion diced
  • 1 stalk Celery diced
  • 1 large Carrot diced
  • 1-2 cloves Garlic diced or pressed
  • 1 cup Frozen spinach optional; replace with fresh in the last few minutes.
  • 2 medium Potatoes peeled and cut into chunks
  • 1 Tbsp Olive oil plus more for serving
Flavor Enhancers
  • 1 Tbsp Tomato paste
  • 1/3 cup White wine 80 ml; feel free to use any leftover drinkable white wine.
  • 1 sprig Rosemary or substitute with dried
Broth & Seasoning
  • 2 cups Vegetable broth or hot water 500 ml
  • 1/2 tsp Paprika optional
  • 1/2 tsp Salt plus more to taste
  • 1/8 tsp Black pepper plus more to taste

Method
 

Step-by-Step Instructions for WHITE BEAN SOUP
  1. Heat the olive oil in a large pot over medium heat until shimmering, about 1 minute.
  2. Add diced onion, carrot, and celery, then sauté for about 5 minutes until the onion is translucent.
  3. Stir in minced garlic, canned cannellini beans, tomato paste, and potato chunks. Cook for about 1 minute.
  4. Pour in the white wine and stir gently to deglaze the pot, cooking for about 1 minute.
  5. Add frozen spinach and vegetable broth or hot water, increase heat to bring to a boil.
  6. Cover the pot and reduce heat to low. Simmer for 15 minutes.
  7. Taste and adjust seasoning with salt and black pepper, removing the rosemary sprig.
  8. Serve the soup in bowls, drizzling with olive oil and sprinkling with black pepper.
