- In a large mixing bowl, add the strawberry gelatin to 1 cup of boiling water. Stir until completely dissolved.
- Gently fold in the drained crushed pineapple and freshly chopped strawberries.
- Add the cottage cheese and thawed whipped topping, and fold until combined.
- Gently fold in the mini marshmallows.
- Cover the bowl and refrigerate for at least 2 hours.
- Before serving, gently stir and consider garnishing with extra strawberries or mini marshmallows.
