For the Base
  • 1 box strawberry gelatin Ensure it is fully dissolved in boiling water.
  • 1 cup boiling water Dissolves the gelatin completely.
  • 1 cup crushed pineapple Lightly drain before mixing.
For the Fluff
  • 2 cups fresh strawberries Rinse, dry well, and chop before use.
  • 8 oz whipped topping Thaw before use.
  • 2 cups mini marshmallows Gently fold in last.
  • 1 cup cottage cheese Can substitute with softened cream cheese.

Method
 

Preparation
  1. In a large mixing bowl, add the strawberry gelatin to 1 cup of boiling water. Stir until completely dissolved.
  2. Gently fold in the drained crushed pineapple and freshly chopped strawberries.
  3. Add the cottage cheese and thawed whipped topping, and fold until combined.
  4. Gently fold in the mini marshmallows.
  5. Cover the bowl and refrigerate for at least 2 hours.
  6. Before serving, gently stir and consider garnishing with extra strawberries or mini marshmallows.
