For the Sauce
  • 8 oz Spinach rinsed and blanched
  • 3 tbsp Extra Virgin Olive Oil use in two portions
  • 1 medium Yellow Onion diced
  • 2 cloves Garlic roughly chopped
  • 1 cup Fresh Basil tightly packed
  • 1 cup Fresh Parsley loosely packed
  • 1/4 cup Pistachios shelled and unsalted
  • 1 tbsp Lemon Juice for brightness
  • 8 oz Mascarpone Cheese richness
  • 1/2 cup Parmigiano-Reggiano finely grated, divided
For the Pasta
  • 12 oz Tagliatelle or substitute with fettuccine or pappardelle
  • 1 cup Pasta Cooking Water for creaminess
  • to taste Salt for seasoning
  • to taste Pepper for seasoning

Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a rolling boil. Blanch spinach for 30 seconds, transfer to ice bath, then drain.
  2. In a pot, heat 1 tablespoon olive oil over medium heat. Sauté onion for 10-12 minutes, then add garlic for 1 minute.
  3. In the same pot, boil water, add salt, and cook tagliatelle until al dente, reserving 1 cup pasta water.
  4. Blend spinach, basil, parsley, pistachios, lemon juice, and remaining olive oil until minced. Add mascarpone, onion, garlic, and half Parmigiano-Reggiano, blending until smooth.
  5. Toss tagliatelle with the sauce, using reserved pasta water for consistency.
  6. Serve in bowls, garnishing with remaining Parmigiano-Reggiano and olive oil.
